Acacia (Robinia Pseudoacacia)

Ideal for preserving the fruit and keeping wines fresh, acacia comes from the country of Romania. Also known as false acacia, it is generally characterized by its low extractable tannin content and a greater reductive environment.

This species provides a high content of aromatic aldehydes, associated with notes of vanilla, and it enhances floral notes over time. In white wine, it lends aromatic qualities, improves the fruit and delivers a floral character, and in red wine, notes of spice.
