It all begins in the forest

The excellence of natural oak drying and our woods at TN Coopers.

At origin: Logs rest for 12 months in the forest after being felled, absorbing the essence of the microflora for aroma contribution.
At the sawmill: They are debarked and dried for up to 8 months before becoming staves.

Once in our yard, the wood rests for a period of 24 to 48 months to reach optimal balance before entering production. The staves are stacked in special wooden cradles that improve air circulation and curing, exposing them to the sun, wind, occasional rain, and additional water for natural washing and drying.

During the seasoning process, the yard is monitored with weather station software:

  • Atmospheric Pressure
  • Weather forecast

The slow and progressive drying aims to produce biological and chemical reactions that lead to the highest organoleptic quality.
