Aqua System

Contributes to softening and allowing for a slower and deeper penetration of toasting into the wood

At TN Coopers, we have created the AQUA system, which combines the use of water under pressure and temperature, both for our barrels and alternatives, developing an alternative for wines that seek a lower tannic, woody, and toasted contribution, respecting the fruit of each variety.

For barrels, we have a 360° washing system that allows us to reach every corner of the barrel body. For alternatives, thanks to our R&D and engineering team, we have developed a continuous washing system, 100% created in-house, that enables us to clean all types of staves. Currently, we are the only cooperage in the world to offer this system for alternatives.

RESULTS OF THE AQUA SYSTEM EVALUATION IN BARRELS

Study conducted with French Oak barrel staves in the sensory laboratory of the University of Chile. The tasting panel consisted of 10 panelists in isolated booths at a temperature of 20°C. The variety of wine was Cabernet Sauvignon with 25% contact with barrel staves. *The results obtained vary according to the type of wood and the variety of grape used.

RESULTS OF THE AQUA SYSTEM EVALUATION IN ALTERNATIVES

Given the results, wines with AQUA staves showed a higher amount of fruit and a lower amount of bitterness and astringency. For this reason, in structure and persistence, the wines appeared more gentle and rounded. *The results obtained vary according to the type of wood and the variety of grape used.
