EXOTIC WOODS
Acacia
We have delicately extracted the faithful aromas and flavors of acacia using an exclusive light toasting system, making them stand out above the fruit.
On the nose, aromas of coconut, chocolate, and toast contribute to complexity, and in the mouth, it provides structure and persistence, making the wine broader and longer with pleasant toasted and smoky notes.
Acacia
Sourced from Romania, acacia wood, also known as false acacia, is generally characterized by its low extractable tannin content and a higher reductive environment, ideal for preserving fruit and maintaining fresh wines.
This species contributes with a high content of aromatic aldehydes associated with vanilla notes and enhances floral notes over time. In white wine, it confers aromatic qualities, improves fruit, and delivers floral character, while in red wine, it enhances spicy notes.
Unlike oak, acacia requires a drying time of 12 to 18 months.
Lenga, from Patagonia
Lenga wood is sourced from sustainable exploitation of Patagonian forests in Chile, under CONAF guidance. Its use in the aging of wines and spirits imparts unique characteristics, providing an aromatic profile that enhances red fruit, sweet notes, cedar touches, and slight toasted notes. On the palate, it improves the mid-palate, adds volume, and brings back fruit and floral notes. It stands out for its low astringency and very soft and delicate tannins. In spirits, it imparts a very delicate pale pink color and enhances honey and smoky flavors. Recommended for short to medium aging (6-9 months).
