the Final Composition of White Wines<\/h2><h3>University of Valladolid<\/h3><\/div><\/div><\/a>\n\t\t\t\t\t<\/div>\n\n\t\t\t\t\t<div id=\"elementor-tab-content-2371\" class=\"elementor-tab-content elementor-clearfix\" data-tab=\"1\" role=\"region\" aria-labelledby=\"elementor-tab-title-2371\"><div class=\"certificaciones__content\"><p><strong>Conclusions:<\/strong><\/p><ul><li>Aging with different woods increased the content of phenolic compounds.<\/li><li>Condensed tannins increased with wood aging, except in Quercus candicans and Nothofagus pumilio.<\/li><li>Tartaric esters were better preserved in wines with woods, and even increased, with alternative woods following traditional patterns.<\/li><li>Wines aged with Quercus humboldtii (Columbian Oak) were the most favored by tasters among alternative woods, followed by Robinia pseudoacacia.<\/li><li>The color intensity increase of wines with alternative woods was similar to that of traditional woods, except for wines aged <h2>IAM Astringency Project<\/h2>         <h3>Study conducted by TN Coopers together with the Faculty of Agronomy and Natural Systems of the Pontifical Catholic University of Chile<\/h3>     <\/div> <\/div><\/a>\n\t\t\t\t\t<\/div>\n\n\t\t\t\t\t<div id=\"elementor-tab-content-2372\" class=\"elementor-tab-content elementor-clearfix\" data-tab=\"2\" role=\"region\" aria-labelledby=\"elementor-tab-title-2372\"><div class=\"certificaciones__content\"><strong>General Objective:<\/strong> Characterize the astringency that different wood origins and drying times contribute\nto barrel manufacturing.<\/div><div class=\"certificaciones__content\"><p><strong>General Conclusions of the Study:<\/strong><\/p><ul><li>Various techniques were analyzed for determining astringency in woods with different drying\ntimes and origins, such as: Wood Astringency Index (by tribology), Total Polyphenol Content,\nand Tasting.<\/li><li>Both total polyphenol content and sensory analysis showed high variability in their results,\nmaking their ability to discriminate between different woods less clear than the Wood\nAstringency Index obtained by tribology (IAM), highlighting the interest in this technique for\nmonitoring astringency over time.<\/li><\/ul><\/div><div>\u00a0<\/div><div class=\"certificaciones__content\"><p>The results obtained by IAM can therefore assist in decision-making such as:<\/p><ul><li>Shortening drying times for woods.<\/li><li>Defining similarities or differences between suppliers and origins.<\/li><li>Objectively classifying woods in terms of astringency.
