The Convection line, which includes recipes from light toast (LT) to high toast (HT),  shows a higher proportion of phenolic compounds which contributes to a higher perception of structure in red wines, as well as a better capacity to keep and fixate color through time.  The time and temperatures designed for this line, contribute to a higher availability of wood polysaccharides which are transferred to wine. This translates to a higher volume sensation in the palate.
