Cherry (Prunus Avium)

Unlike oak wood, which contributes ellagitannins, cherry wood provides condensed tannins similar to those present in grapes. Given its phenolic composition, it is recommended for short aging periods in barrels. Just like acacia, it is a type of wood with a high lignin content, which can lead to vanilla-associated notes. In the case of distilled spirits, it can be used to give the product a quick aging.
